Luscious Lemon Drizzle Traybake

I haven't like lemon in food and drink for very long as I used to not like it but for the last year o two I absolutely love lemon. And one of my favourite lemony foods is lemon drizzle cake. Below is a quick recipe so you can also enjoy the lemony goodness.

MY RECIPE
INGREDIENTS
240g self-raising flour
2 large eggs
200g caster sugar
140g butter softened
2 tablespoons of milk
2 teaspoons of baking powder
2 ripe lemons, grated for the cake and juice of for the topping
50g granulated sugar for the topping
METHOD
1) Preheat the oven to 160/Fan 140/Gas Mark 3.
2) Measure out all of the cake ingredients and add to a large mixing bowl.

3) Using an electric mixer, whisk the mixture for two to four minutes until it is light, fluffy and well blended.

4) Pour the mixture into a baking tray and make sure that you scrape the sides of the bowl so that all the mixture is added to the tin. Use the back of a spatula to level the mixture in the tin. You can grease the tray if you want, but I didn't.
5) Bake the traybake in the oven for 25 to 30 minutes. Leave it in the oven for longer if you want a more crisp bake or if your oven doesn't bake food that quickly.

6) Remove traybake from the oven once completely cooked to your satisfaction and leave to start cooling within the tray.

7) Measure out the granulated sugar and lemon juice into a small bowl and beat together until it creates a runny consistency. Drizzle over the cake whilst it is still warm and in the tin.
